Need help with Royalty rates... how do they work???

I am currently in talks with a food manufacturer in order to use their logo on some t-shirts which I intend to produce and sell to retailers.
I have been asked for a business plan which will include royalty rates. I can produce a business plan but the only problem is, I have no experience in the area of royalty rates, and after doing some research, have been left completely confused by the way royalty rates work.
If anybody could break it down for me in a simple way or perhaps provide a link that explains them well, it would be greatly apprecaited.
I also need advice on what type of agreement would be best to enter in to as this is another area which seems very complex to me.
